Cinnamon-Roasted Delicata Squash Rings with Tahini Drizzle Recipe

Ingredients

  • 2 medium delicata squash, washed
  • 2 tablespoons olive oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • 1 teaspoon maple syrup
  • 2–3 tablespoons water (to thin tahini sauce)
  • Toasted sesame seeds and chopped parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Slice the delicata squash into 1/2-inch rings, removing the seeds. Place the rings on the prepared baking sheet.
  3. In a small bowl, mix the olive oil, cinnamon, smoked paprika, salt, and pepper. Brush the mixture onto both sides of the squash rings.
  4. Roast for 20–25 minutes, flipping halfway through, until the squash is tender and golden brown.
  5. In a small bowl, whisk together tahini, lemon juice, maple syrup, and water until smooth. Drizzle over the roasted squash rings.
  6. Garnish with toasted sesame seeds and parsley before serving.
