Ingredients
- 2 medium delicata squash, washed
- 2 tablespoons olive oil
- 1 teaspoon ground cinnamon
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 2 tablespoons tahini
- 1 tablespoon lemon juice
- 1 teaspoon maple syrup
- 2–3 tablespoons water (to thin tahini sauce)
- Toasted sesame seeds and chopped parsley, for garnish
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Slice the delicata squash into 1/2-inch rings, removing the seeds. Place the rings on the prepared baking sheet.
- In a small bowl, mix the olive oil, cinnamon, smoked paprika, salt, and pepper. Brush the mixture onto both sides of the squash rings.
- Roast for 20–25 minutes, flipping halfway through, until the squash is tender and golden brown.
- In a small bowl, whisk together tahini, lemon juice, maple syrup, and water until smooth. Drizzle over the roasted squash rings.
- Garnish with toasted sesame seeds and parsley before serving.
