Ingredients
- 1 medium head of cauliflower, chopped into florets
- 2 tablespoons olive oil or unsalted butter
- 3 garlic cloves, minced
- 1/4 teaspoon saffron threads, steeped in 2 tablespoons warm water
- 1/4 cup unsweetened almond milk (or regular milk for creaminess)
- 1/4 teaspoon sea salt (or to taste)
- Freshly ground black pepper, to taste
- 2 tablespoons fresh chives, finely chopped (plus extra for garnish)
Instructions
- Cook the Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook until tender, about 10 minutes. Drain and set aside.

- Fold in Chives: Stir in the fresh chives, adjusting seasoning as needed.
- Serve: Transfer the cauliflower mash to a serving bowl, garnish with additional chives, and serve warm as a flavorful and nutrient-rich side dish.
