Ingredients

  • 1 medium head of cauliflower, chopped into florets

  • 3 garlic cloves, minced
  • 1/4 teaspoon saffron threads, steeped in 2 tablespoons warm water
  • 1/4 cup unsweetened almond milk (or regular milk for creaminess)
  • 1/4 teaspoon sea salt (or to taste)
  • Freshly ground black pepper, to taste
  • 2 tablespoons fresh chives, finely chopped (plus extra for garnish)

Instructions

  1. Cook the Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook until tender, about 10 minutes. Drain and set aside.

  4. Fold in Chives: Stir in the fresh chives, adjusting seasoning as needed.
  5. Serve: Transfer the cauliflower mash to a serving bowl, garnish with additional chives, and serve warm as a flavorful and nutrient-rich side dish.
